Steak Chicken Enchilada RecipeFIXINGS

3/4 pound top sirloin steak
2 tbs olive oil
1 tbsp lime juice
1 garlic clove, finely minced
1/2 teaspoon chilli powder
1/2 teaspoon cumin
1/2 teaspoon hot pepper flakes
1/2 teaspoon black pepper
1/2 teaspoon salt
8 flour tortillas (8 inch/20 cm)
1-2 onion, we generally use approx. 1-2 depending on size (however much you enjoy, enough to make a great combination with the peppers)
2 little sweet peppers, of your choice (red, green, or yellowish)

salsa
sour cream
shredded cheese
chopped tomato

Guide
Slice steak into thin strips.
In bowl, mix together 1 tbs olive oil, lime juice, garlic, chilli powder, cumin, hot pepper flakes, salt & black pepper.
Add steak strips and stir to coat.
Wrap tortillas in foil and place in 350deg oven -10 minutes or until warmed through.
Cut onions in half lengthwise and slice into strips, cut on your peppers.
In large non-stick frying pan over moderate high heat, heat remaining tablespoons of olive oil.
Add onions & peppers -4 minutes transport into a bowl and set aside.
Add steak to skillet, cook, stirring for 3-4 minutes or till they lose their reddish colour.
Return onions and peppers stir for approximately one minute.
To serve, spoon some of the steak mixture down the middle of every tortilla, top with your toppings that are desired, fold underside of tortilla up over filling, fold the sides in, overlapping.
